Stuffed Aubergines

Oven

Pre-heat to 200°C.

Coriander (1 tsp ground)
Cumin seed (¼ tsp ground)
Turmeric (¼ tsp ground)
Cayenne (¼ tsp ground)
Mango Powder (¼ tsp)
Salt (¼ tsp)
Sugar (1 tsp soft brown)

Place in small bowl and mix well.

Aubergines (250g baby)

Slice each into 4 wedges and place in casserole.
Sprinkle spice mixture over aubergines and mix well.

Olive Oil (3 tbp)

Pour over aubergines and stir well.
Place in oven for 30 minutes.

Notes

You can use large aubergines but need to cut them into 1 cm thick slices.
