Olive Oil (4 tbp)
Heat in heavy pan.
Salt Pork (100g minced or finely diced)
Add & sauté until the meat starts to brown.
Onion (1 medium chopped)
Add & sauté until the onion starts to brown, about 10 minutes.
Red Potatoes (500g peeled in 2cm dice)
Add and lower heat to medium-low and cook until starting to soften, about 20 minutes.
Parsley (5 tbp)
Spring Onions (6 chopped)
Garlic (1 clove crushed)
Black pepper (1 tsp ground)
Add and stir.
Cook until potatoes are starting to 'cream', about 45 minutes.
Add a little water as necessary, when finished there should be no water remaining.
Just before the cooking is finished check seasoning and add salt if necessary, it should not be.
