Place pan of salted water on to boil.
Egg yolks (2)
Double cream (4 tbp)
Parmesan cheese (60g grated)
Add and beat mixture together.
Olive oil (2 tbp)
Heat in pan on moderate heat.
Pancetta or lean smoked bacon (200 g in small strips)
Add and fry until golden and becoming crisp, around 5 minutes.
Tagiatelle (400 g)
Add to boiling water and cook. Drain.
Add to bacon pan and coat pasta with the oil.
Add reserved mixture and mix well.
Salt (1 tsp)
Black pepper (1 tsp ground)
Serve with extra parmesan available.
