Green Beans In Tomato Sauce

Olive Oil (3 tbp)

Heat in heavy pan.

Onion (1 large finely chopped)
Bird's eye pepper (1 red, finely sliced)
Garlic (1 clove crushed)

Add & sauté until soft, about 20 minutes.

Tomatoes (400g peeled, de-seeded & chopped)
Salt (½ tsp)
Black pepper (1 tsp ground)

Add and stir.
Gently simmer over a very low heat for 1 hour.

Green Beans (300g frozen)

Add and cook until heated through.

Notes

If using fresh beans then simmer for 3 minutes before adding to sauce.
Goes very well with a number of hot main dishes including curries.
