Pre-heat oven to 160°C.
Beef (1½kg Toprib or Brisket boned & rolled)
Salt (1 tsp)
Black pepper (1 tsp ground)
Season beef generously on all sides.
Butter (50 g)
Olive oil (1 tbp)
Put in pot on high heat.
Brown beef on all sides. Remove & reserve.
Onion (1 large chopped)
Smoked bacon (150g in 5mm cubes)
Garlic (2 cloves crushed)
Add & fry until onion has wilted & starting to colour.
Check seasoning & add more Salt & Pepper if necessary.
Frozen peas (500g)
Add & mix gently, remove and reserve.
Return beef to pot.
Place pea, onion and bacon mixture around beef.
Cover tightly.
Cook in oven for 3 hours.
Notes
Serve sliced surrounded by the pea mixture.
Fresh peas also work but take longer to prepare.
