Olive oil (4 tbp)
Beef Skirt or Chuck (800g in 2cm cubes)

Heat oil in pan on high.
Add meat and brown in batches.
Reserve meat.
Reduce heat to medium.

Onion (1 medium finely chopped)

Add to pan and sauté gently until soft, about 15 minutes.

Garlic (4 cloves minced)
Ginger (1 tbp grated)

Add & fry gently for about 2 minutes.

Tomato paste (2 tbp)
Tomatoes (400ml peeled, seeded & chopped)
Paprika (1 tsp smoked)
Cayenne (½ tsp)
Chicken stock (200ml)
Peanut butter (120ml)
Black pepper (1 tsp ground)
Salt (½ tsp)

Add & stir.
Return reserved meat, stir.
Bring to the boil.
Cover and simmer for 1½ hours.
Stir from time to time.

Notes

Serve with South African Yellow Rice.
Also works well with Chicken & other meats.
